Since 1933, Trieste-based Illy has turned the practice of grinding and roasting coffee into a science. Now in its third generation, the family-run company specializes in making a single blend of espresso from Arabica beans sourced from farmers in 15 countries. Inside its plant, coffee ‘sommeliers’ savor and spit dozens of espresso shots each day to ensure beans meet the company’s standards before coffee is shipped to supermarket shelves and one of the 50,000 restaurants and cafes that serve its brew.
